Purple Fruits

You may have seen a picture of a meal I prepared and posted on our social media page of baked salmon in sweet teriyaki and ginger marinade with Thai black rice and plum vine tomatoes. Truly Delicious!

This is a highly nutritious meal containing natural oils and protein (essential for joints/muscles), vitamin C, K and potassium (good for immune system, blood clotting and muscle homeostasis). With whole grains that provide energy, anti-oxidants, and containing natural fibre (roughage) essential for intestinal health.

Thai black rice is actually deep purple and it gets its colour from a pigment called anthocyanin. Anthocyanins are antioxidants found in many fruits and vegetables such as: plums, blackberries, blueberries, black grapes as well as aubergines (in the skin), red cabbage and red onions.

Include portions of Anthocyanins in your five a day for optimal health and vitality.
