5 minutes Prep. Serves 4 – 6.
1200 ml water
1 stock cube
3 medium carrots – Chopped
1 medium – large red onion Sliced
A good pinch of Kale (1/5 of large bag)
1 Garlic Clove – Chopped
1/3 of a medium sized swede – diced
1 small potato – chopped
Good twist of ground pepper.
Pour water into a large saucepan and turn on the heat. Add the stock cube, the carrots, onions, swede, garlic, kale and potato. Bring to the boil and simmer for 10 – 15 minutes. Use a hand blender to blend the ingredients or pour ingredients into a food processor.
Pour into a container and store in the fridge for up to 7 days.
